Fajitas are the perfect example that healthy food can be incredibly fun and tasty. The secret is making our own spice blend, avoiding commercial packets that are loaded with sodium and hidden sugars. By cutting everything into julienne, we ensure quick cooking that keeps the vegetables al dente.

๐ Step-by-Step Preparation
- The Spice Blend (The Soul): In a small bowl, mix 1 tsp of cumin powder, 1 tsp of sweet paprika, 1/2 tsp of dried oregano, 1/4 tsp of garlic powder, and a pinch of cayenne if you like it spicy.
- Ingredient Preparation: Cut 10.5 oz (300g) of thin lean beef steaks into strips. Julienne 1 red bell pepper (3.5 oz), 1 green bell pepper (3.5 oz), 1 yellow bell pepper (3.5 oz), and 1 large onion (5.3 oz).
- Quick Marination: Sprinkle half of the spices over the meat along with a splash of lime juice and mix well.
- High Heat Sautรฉ: In a large wok-style pan, heat 1 tbsp (15ml) of EVOO. Sautรฉ the peppers and onion over very high heat for 4-5 minutes. They should be golden on the outside but crispy on the inside. Add the rest of the spices. Remove the vegetables and set aside.
