Brown Rice with Shiitake and Asparagus
π A comforting vegan dish. Fiber-rich brown rice, shiitake mushrooms with deep umami flavor, and crunchy wild asparagus.
π Ingredients
- 7 oz Brown rice
- 5.3 oz Fresh shiitake (or 0.7 oz dried)
- 7 oz Wild asparagus
- 24 fl oz Veggie broth
- 1 tbsp EVOO
- 1/2 Onion
π Botanical Rice: The Healing Power of Mushrooms
When cooking whole grains, we need strong flavors to accompany the intense character of the grain. The Shiitake mushroom is the perfect companion: its deep earthy and woody flavor (umami) permeates the rice without the need for heavy broths. Along with green asparagus, we achieve a complete, textured, and wonderfully nutritious plant-based dish.
π Why it is exceptionally healthy
- Fungal Immunity: Shiitakes contain lentinan, a type of polysaccharide that, according to various studies, powerfully stimulates the immune system's defenses.
- Low Glycemic Load: Brown rice retains its bran and germ, slowing the absorption of carbohydrates and keeping you full for hours.
- Kidney Cleanse: Fresh green asparagus is a known natural diuretic that helps purify the kidneys and urinary tract.
π Step-by-Step Preparation
- Mushroom Hydration: If using 0.7 oz (20g) of dried shiitake, soak it in hot water for 30 minutes. (If using 5.3 oz / 150g of fresh, simply wipe it with a damp cloth and slice it). Keep the soaking water!
- The Aromatic Sofrito: Chop 1/2 sweet onion and 1 garlic clove. In a shallow pot, sweat over low heat with 1 tbsp (15ml) of EVOO for 8 minutes.
- The Veggie SautΓ©: Wash 1 bunch of wild asparagus (about 7 oz / 200g). Discard the hard part of the stem and cut the rest into 1-inch (2 cm) pieces (reserve the tips intact). Add the chopped asparagus and sliced shiitake to the pot and sautΓ© for 3 minutes.
- The Grain: Add 7 oz (200g) of brown rice. Stir everything together for 2 minutes over high heat to toast the rice slightly.
- The Magic Liquid: Pour in the strained shiitake soaking water plus vegetable broth (to complete about 24 fl oz / 700ml of hot liquid). Add salt, cover the pot, and simmer over low heat for 35-40 minutes.
- The Crunchy Tips: With 5 minutes remaining, place the reserved asparagus tips on top of the rice. Turn off the heat and let rest covered for 5 minutes.
