The trick to making them incredibly healthy is to skip the packet seasonings (full of sugar and excessive salt) and make our own spice blend.   1. Preparing the Filling: Cut 14 oz (400g) of chicken breast into thin strips. Also cut into strips (thick julienne) 1 red bell pepper, 1 green bell pepper, 1 yellow bell pepper, and 1 large onion.
  2. Homemade Seasoning: In a bowl, mix 1 teaspoon of sweet paprika, 1/2 teaspoon of ground cumin, 1/2 teaspoon of garlic powder, a pinch of oregano, salt, and black pepper.
  3. Vegetable Sautรฉ: Heat a large skillet or griddle with 2 tsp (10ml) of EVOO over very high heat. Add the peppers and onion. Sautรฉ for 6-8 minutes until they soften and begin to blister on the edges. Remove to a plate.
  4. Browning the Chicken: In the same pan, add one more drop of oil if necessary and toss in the chicken strips. Brown them over high heat for 4 minutes.
  5. Spice Magic: When the chicken is almost done, put the vegetables back into the pan. Sprinkle the entire spice mixture and a tiny splash of water (2 tablespoons) so the spices form a sauce that coats everything. Stir for 1 more minute and turn off the heat.
  6. Assembly: Heat the corn tortillas in a dry skillet. Bring everything to the table so everyone can assemble their fajitas, optionally topping with a little fresh lime juice.
