- 1.1 lbs Zucchini
- 1.8 oz Fresh Basil
- 1 oz Pine Nuts
- 2 oz EVOO
- 1 Garlic Clove
- Salt and Pepper

Zucchini noodles, known as Zoodles, are the perfect alternative to reduce glycemic load. Being 90% water, zucchini is highly hydrating and very low in calories.
Homemade Pesto
Homemade pesto with 1.8 oz fresh basil provides digestive essential oils, while 1 oz pine nuts provide excellent fatty acids for the heart.
Detailed Preparation
- Spirals: Convert 1.1 lbs zucchini into noodles using a spiralizer.
- Drying: Place them on absorbent paper with a pinch of salt for 10 minutes. This prevents them from releasing water onto the plate.
