- The Spicy Note: Peel a small piece of fresh ginger (the size of a large hazelnut) and grate it over the pot. Mix well.
- Cooking: Cover the vegetables with 20 fl oz (600ml) of low-sodium vegetable broth. Bring to a boil, lower the heat, cover the pot, and simmer for about 20 minutes until the carrot is very soft when pierced.
