Gilt-head Bream en Papillote with Julienne Vegetables
π Juicy white fish with no added fats. Bream cooked in its own steam inside a packet, over a bed of crunchy vegetables.
π Ingredients
- 2 Bream loins
- 1 Carrot
- 1/2 Leek
- 1/2 Zucchini
- 1 Lemon slice
- 2 tsp EVOO
π Papillote: Steam Magic in Your Own Oven
The "papillote" technique consists of cooking food enclosed in an airtight wrapper. The fish cooks with its own juices and the steam released by the vegetables at the base. The result is a gilt-head bream with an incredibly tender texture that doesn't dry out, doesn't dirty the oven, and retains 100% of its vitamins and minerals.

- Zero Oxidation: By cooking in a closed, humid environment, the delicate fatty acids of the fish do not oxidize from direct heat.

π Step-by-Step Preparation
- The Veggie Bed: Cut 1 carrot, 1/2 leek, and 1/2 small zucchini into very fine sticks (julienne). Also cut 1/2 sweet onion into fine strips.
- Packet Preparation: Cut a large piece of baking paper (or aluminum foil). Lightly brush the center with a drop of EVOO.
- Assembly: Place a nest of the julienne vegetables in the center of the paper. Season the vegetables lightly with salt and pepper.
- The Fish: Ask your fishmonger for 2 clean, boneless gilt-head bream loins (about 10.5 oz / 300g total). Place the loins over the vegetable bed. Add salt, white pepper, a slice of lemon on top of the fish, and a tiny drizzle of EVOO or white wine.
- The Airtight Seal: Fold the paper over the fish and fold and seal the edges tightly, making pleats. It should be completely closed like a pasty so steam cannot escape.
- Baking: Place the packet on a tray and bake at 400Β°F (200Β°C) for 15 minutes. You will see the packet inflate like a balloon. Take it out of the oven and open it carefully at the table (watch out for the hot steam!).
