Grilled Prawn and Pineapple Skewers

Combining seafood with tropical fruits is an infallible technique to elevate a quick dinner to the category of a feast. Pineapple, when grilled, caramelizes its natural sugars and intensifies its sweet flavor, contrasting perfectly with the salinity of the prawn. π Step-by-Step Preparation
- Seafood Cleaning: Peel 14 oz (400g) of good-sized raw prawns (about 16-20). With a small knife, make a slight cut along the back and remove the black vein (the intestine) for a cleaner and less bitter result.
- Fruit Cutting: Peel 1/4 of a fresh pineapple (about 7 oz / 200g cleaned). It is vital that it is fresh and not canned, as the canned one contains syrups and its texture does not hold up well on the grill. Cut it into cubes of the same thickness as the prawns.
- Express Marination: In a bowl, put the prawns and pineapple. Add the juice of half a lime, 1 tablespoon of soy sauce, and finely chopped fresh cilantro. Let rest for only 10 minutes (if left longer, the lime acid will cold-cook the prawn).
- Skewering: Use wooden skewers (previously soaked so they don't burn). Thread by alternating a prawn, a pineapple cube, another prawn... until the skewers are full.
- The Grill (High Heat): Heat a griddle or large skillet over very high heat. Grease lightly with a brush and a few drops of EVOO.
- Quick Cooking: Cook the skewers for 1 and a half minutes per side. The prawns should turn pink and opaque, and the pineapple should have a slight char on the edges. Serve immediately with an extra lime wedge.
