- Fish Preparation: Dry 2 salmon fillets very well (12.7 oz total) with paper towels. Salt and pepper lightly.
- Crust Creation: Chop 2.1 oz raw almonds until they have unequal pieces. Mix in a bowl the almonds with the zest of one lemon and a handful of fresh chopped parsley.
- Healthy Adhesive: Spread the top of the fillets with 0.7 oz Dijon mustard. This will act as glue for the crust and provide a delicious acidic touch.
- Coating: Press the almond mixture onto the mustard until the fillet is well covered.
