π Step-by-Step Preparation
- The Butcher's Cut: Ask for 14 oz (400g) of lean beef steaks (sirloin or rump). Cut it into 0.4-inch (1 cm) thick strips. It is vital to cut "against" the direction of the muscle fiber so the meat is very tender when chewed.
- Express Marination: In a bowl, mix the meat strips with 4 tsp (20ml) of low-sodium soy sauce, 1 teaspoon of sesame oil, 1 finely chopped garlic clove, and a piece of grated fresh ginger. Let rest for 10 minutes.
