- 3 Free-range eggs
- 13.5 fl oz Crushed tomato
- 3.5 oz Red bell pepper
- 3.5 oz Onion
- Spices
- 0.5 fl oz EVOO
π³ Shakshuka: The Breakfast or Dinner That Captivates
Shakshuka is a traditional dish that combines the simplicity of an egg with the power of a well-seasoned sofrito. It is rich in lycopene, an antioxidant present in tomato that is activated by cooking, and in high-value proteins thanks to free-range eggs.
π Detailed Instructions
- Sofrito Base: Chop 3.5 oz (100g) of onion, 3.5 oz (100g) of red bell pepper and 1.8 oz (50g) of green bell pepper. SautΓ© them in a wide skillet with 0.5 fl oz (15ml) of EVOO until very tender.
- Seasoning: Add 1 minced garlic clove, 0.18 oz (5g) of cumin, 0.1 oz (3g) of sweet paprika and, if you like spice, a pinch of cayenne. Cook 1 minute for the aromas to release.
- The Sauce: Pour 13.5 fl oz (400ml) of crushed natural tomato. Let it reduce on low heat for 15 minutes until the sauce is thick and dark.
- The Eggs: With a spoon, make 3 hollows in the sauce. Crack 3 free-range eggs into the hollows. Cover the skillet and cook 5 minutes. We want the whites to be set but the yolk still runny.
- Final Touch: Decorate with 0.35 oz (10g) of cilantro or fresh parsley and, optionally, 0.7 oz (20g) of crumbled feta cheese.
Pair it with whole-grain bread to enjoy the yolk mixed with the spiced sauce.
