- 7 oz Tuna loin
- 0.7 oz Sesame seeds
- 1.8 oz Wakame seaweed
- 0.17 fl oz Sesame oil

π Instructions for Perfect Searing
- The Coating: Dry a 7 oz (200g) tuna loin well. Press both sides onto a plate with 0.7 oz (20g) of sesame seeds (white and black mixed) until covered.
- Very Hot Skillet: Heat a skillet with 0.17 fl oz (5ml) of sesame oil or EVOO. It should smoke slightly.
- Quick Searing: Cook the tuna only 1 minute per side. The goal is for the seeds to toast but the inside of the tuna remains pink and juicy.
- Mineral Garnish: Serve with 1.8 oz (50g) of hydrated wakame seaweed seasoned with a bit of rice vinegar.
- Presentation: Slice the loin into β inch thick slices to show the color contrast.
